Prawn Noodle Soup is one of the famous street hawker dishes originate from Penang. The aromatic prawn broth and sweet vegetables will definitely stir the eater appetite. Recommend to add dark shrimp paste and spicy prawn sauce for better tasting.

 

Below is the preparation steps:

  • Wash and peel shrimp then set the shell aside
  • Wash and chop water spinach into few segments
  • Cut hard boiled egg in half then set aside

Prawn Broth Preparation (I)

Pour cooking oil in a pot then add remaining Ingredient A into the pot and stir-fry for 2 minutes.

Prawn Broth Preparation (II)

Add Ingredient B into the pot and let simmer over low heat for 1 hour.

Prawn Broth Preparation (III)

Remove shells from the broth and skim off the scums on top of the broth.

(Prawn broth is ready at this stage.)

Prawn noodle preparation (I)

Blanch shrimp in the prawn stock while remaining Ingredient C in a pot of boiling water for 3 mins. Rinse dry and set aside.

Prawn noodle preparation (II)

Fix a bowl of noodles at the bottom then arrange egg, shrimp, water spinach, bean sprout, shredded chicken on top. Sprinkle fried shallot and fill the bowl with prawn broth. Ready to serve.

(Using either noodle and rice vermicelli or both are optional in this recipe.)
