Vietnamese Fish Sauce Chicken Wing or known as “Canh Ga Chien Nuoc” is a favourite local finger food in Vietnam. This sweet and sour chicken wing is hard to resist once you get a hand on it. Recommend to serve with chilli flakes and lime juice for better tasting. 

 

Below is the preparation steps:

  • Wash and cut chicken wing in half, set aside
  • Deseed and finely chop chilli
  • Wash and peel garlic, finely chop

Chicken Marinate Preparation

Mix Ingredient A in a bowl, leave marinate for 10 minutes.

Fish Sauce Preparation

Pound Ingredient B using mortar and pestle then add in Ingredient C. Stir well until fully dissolved.

(May use the food processor to replace this steps.)

Chicken Wing Preparation (I)

Coat marinated chicken wing with cornflour and set aside.

Chicken Wing Preparation (II)

Heat up a pan with cooking oil, arrange chicken wings in the pan while oil is still cold. Switch heat to medium-high then fry for 8 mins, turn over wings and fry for another 7 mins until both sides are golden brown.

(By increasing temperature of the oil will cook the wings thoroughly, making it crispy on the outside and juicy on the inside.)

Chicken Wing Preparation (III)

Drain off oil from the pan leaving fried chicken wing intake. Pour fish sauce mixture into the pan and simmer under low heat for 5 minutes.

(Make sure to roughly stir the fried chicken wing after pouring fish sauce into the pan.)

Chicken Wing Preparation (IV)

Transfer chicken wing to a plate then add sliced carrot and cucumber as garnishes. Ready to serve.
